Cucumber Agua Fresca with Lime and Mint
Agua fresca means fresh water in Spanish, and this pale green cooler lives up to the name. Whole cucumber, lime and mint are blended, strained and poured over ice for a drink that is light, bright and only lightly sweet.

Aguas frescas are light, blended drinks best known from Mexico and Central America, made from fruit, vegetables, flowers or seeds and served cold. The cucumber version is one of the most refreshing: it tastes green and clean, with a sharp hit of lime and a cool mint finish.
It is different from cucumber water, where slices simply sit in a jug. Here the whole cucumber goes into the blender, so the drink has more body and much more flavor. You strain it, sweeten it just a little, and pour it over ice. It takes about ten minutes and is perfect for hot days, picnics and anyone who finds plain water boring.
Blended, not infused
Blending releases far more of the cucumber than soaking slices ever could, which is why agua fresca tastes fuller. Straining afterward gives a smooth drink that pours easily. If you prefer more texture, you can skip the sieve and stir the jug before each pour.
Choose a firm cucumber with smooth skin. Thin-skinned types can go into the blender unpeeled, which adds color. Lime is not optional: the acid wakes up the mild cucumber flavor. Mint is the classic herb, but basil or a little fresh cilantro also work if you like a savory edge.
Cucumber, Lime and Mint Agua Fresca
You need
- cucumber, washed and roughly chopped1 large (about 350 g / 12 oz)
- cold water750 ml (3 cups)
- limes, juiced (about 60 ml / 1/4 cup)2
- fresh mint, plus sprigs to serve1 small handful (about 10 leaves)
- honey or sugar, or to taste1 tbsp
- salt, optional1 small pinch
- ice cubes and lime wheelsto serve
Method
- Wash your hands, the cucumber, limes and mint under cool running water.
- Put the cucumber, half the water, the lime juice, mint, honey or sugar and the pinch of salt in a blender.
- Blend until very smooth, about 1 minute.
- Pour through a fine sieve into a jug, pressing the pulp with a spoon. Discard the pulp or stir a spoonful into yogurt.
- Stir in the rest of the cold water. Taste and add a little more lime or sweetener if needed.
- Serve at once over ice with a lime wheel and a mint sprig, or chill in the fridge.
Tips
- Keep the jug covered in the fridge and drink it within a day for the best flavor. Stir before pouring, as it settles.
- For a fizzy version, blend with only 250 ml (1 cup) of water and top each glass with sparkling water.
- A tiny pinch of salt does not make the drink salty. It just makes the cucumber taste brighter.
What the evidence says
Online, cucumber drinks are often sold as detox water or a way to flush the body. None of the health sources behind this article support that idea. The honest benefit is simpler: a drink you enjoy can help you drink enough. The NHS suggests aiming for 6 to 8 cups or glasses of fluid a day, and more when it is hot, when you are active, pregnant or breastfeeding, or when you are unwell.
The bigger health question is sugar. Many agua fresca recipes are generously sweetened. The CDC notes that sugary drinks are the leading source of added sugars in the American diet, and that a 355 ml (12 ounce) regular soda contains about 42 grams of added sugar. The CDC suggests flavoring water with slices of cucumber, lime or lemon instead. This recipe follows that idea, using a single tablespoon of honey or sugar for a whole jug, which works out to only a few grams per glass.
Keeping a fresh blended drink safe
Fresh, uncooked drinks need the same care as a salad. North Dakota State University Extension advises washing fruits and vegetables under cool running tap water just before you eat them, and not using soap or detergent, which are not meant for food.
Cut produce should be refrigerated and used within a few days, and perishable food should not spend more than two hours between 4 and 60 °C (40 and 140 °F). For a picnic or party, keep the jug in a cooler or set it in a bowl of ice, and do not leave it sitting out in the sun all afternoon.
Questions people ask
Do I need to peel the cucumber?
Not if the skin is thin and well washed. Thick or waxed skins can taste bitter, so peel those first.
Is cucumber agua fresca the same as cucumber water?
No. Cucumber water is plain water with slices left to soak. Agua fresca is blended and strained, so it has much more flavor and a little body.
Will cucumber agua fresca help me lose weight or detox?
No drink can promise that. What it can do is replace a sweet soda with something much lower in sugar, which is a useful swap on its own.
